Go to Completed Orders, find the order, click Refund button for full refund, or Actions | Partial refund for a partial refund.
Find the order, click Actions, then Split by guests if you want to equally split order, or Split by products if you want to select the products to split.
Go to POS, on the top of the page click the Gift Card button card_giftcard.
Go to Administration | Marketing | Gift Cards. Here you can see all your active Gift Cards, you can find a specific card by name or email, and for each card you can see the usage history, generate a new code, edit or delete it.

For more advanced closing policies such as close the bookings for some hours in day, or overwrite the booking hours for a day, go to Booking | Calendar, select a day and the click Edit Day.
Yes, you can decide if your online bookings should ask for a Cancellation fee. The guest will only be charged in case of No-Show, or you can decide to convert the Cancellation fee into a Gift Card.
